Cooking Instructions

In large pot, sauté in coconut oil, the tomatoes, garlic, onions, hot pepper, ginger, turmeric, parsley, thyme, rosemary and cilantro.

Keep on low heat until tomatoes start to create their own liquid and the sauce thickens.(about 10-15) minutes. Add water as required to cover vegetables .Next add all other ingredients except cabbage. Let simmer until vegetables are tender but not too soft (10 minutes). Add cabbage for last 5 minutes.

Zesty Waitukubuli Stew


4 lbs fresh local tomatoes

2 large onions chopped coarsely

1 large scotch bonnet pepper, seeded and finely chopped

4 tablespoons of freshly grated ginger

8 garlic pegs, chopped finely

3 tablespoons of freshly grated turmeric or turmeric powder

1/3 cup of fresh thyme, parsley, rosemary and cilantro chopped finely

2 medium sweet potatoes, medium cubed

½ cup of pumpkin(skin on) medium cubed

3 medium sized Irish potatoes, medium cubed

4 large carrots, washed, skins on, cubed

1 medium dasheen or yam, peeled and medium cubed

1 cup shredded cabbage

Coconut oil for sautéing

Sea salt to taste
