Mix together in a large mixing bowl all dry ingredients.
Puree in blender bananas, eggs, coconut oil ,vanilla essence and avocado
Fold banana mixture into dry ingredients and blend well. Turn into a well greased loaf pan. Bake in moderate oven at 350 degrees for approximately 30-40 minutes, let top brown and insert knife to check for readiness.
Serve warm ,grating cacao shavings over top of each slice. Honey or maple syrup can be drizzled on top as well.

Cacao Infused Coconut Bread
1 3/4 cups * red mill gluten free all purpose flour*
2 tsp gluten free baking powder
¼ tsp baking soda
1 teaspoon cinnamon and nutmeg
1/2 cup of chunks of cacao (local chocolate)
2 tablespoon vanilla essence
1/3 cup of coconut oil
1 cup of currants
1 cup of pureed bananas (3-4 bananas)
¼ cup of avocado (in season)
